Recipe – Instant Pot Beef Soup

Beef Vegetable Soup
I love my Instant Pot! This has been a great addition to my kitchen. I recently saw them at Wal-Mart for under $100. What I love best about it is that is made from stainless steel inside and out. You can make a lot of great dishes with it. There is an abundance of recipes on the internet specifically for the instant pot. This particular recipe is for my beef vegetable soup. It is super easy and great for a busy day where you need a quick recipe. I hope you enjoy it!
2 lbs of cubed beef for soup (I purchase a beef chuck roast and make cube size pieces for soup. Grass fed is best)
I 46- ounce can of tomato juice
2 12 -ounce bags of carrot, onion and celery mix (I use Maripoux mix from Kroger)
1 12 -ounce bag of green beans
1 – ounce bag of cubed butternut squash
2 teaspoons of Himalayan salt
½ teaspoon of pepper (more if you prefer)
1 tablespoon of dried parsley (if you have fresh on hand that is even better)
1 tablespoon of dried oregano
Turn Instant Pot on Sauté setting. Add cubed beef and brown on all sides. Add rest of ingredients and mix well. Place lid on Instant Pot and set for 35 minutes. There is a top lever that you can choose to venting or sealing. For this recipe you need to set it to sealing. Once Instant Pot turns off allow it to cool. If you like you can make egg noodles on the side to add to the soup as well. Enjoy!
